I will be working for a school that is a ministry of a church. Well, make that volunteering because it is a non profit volunteer position. I will be getting a love offering every week. I will not be given a W2 or a 1099. Do I pay taxes, and if so, how, without a W2 or 1099, since it is the only income I will have?

Your love offering will technically be for your services to the school, so it will be considered taxable income by the IRS.
If it totals more than $600 for the year, then the church will be required to send you a 1099, but the church should be aware that you most probably would be considered an employee of the church and the love offerings would be considered compensation and require reporting on a W-2 (no matter what the amount).
