A day of offering for Pastor without being considered income

I have heard where one day a year, the church can have members give a check made out to the pastor, and the pastor can receive the funds without being taxed. Is that true?

never heard of it and didn't find anything on the IRS site. money paid to employees goes on their W-2

I would expect that you will never find anything like that in the IRS Regs, must be on someone's wish list.

If you want to DIY your payroll, I highly recommend you look at using Gusto! It is very user friendly and their support is awesome! Plus they know how to set up and maintain payrolls for churches and nonprofit organizations.
